Ingredients:
- 3 cups fresh spinach
- 1 cup strawberries, halved
- 1/2 cup blueberries
- 1 peach, cut into wedges
- 1 red onion, sliced
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
For the Vinaigrette:
- 1 cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
Directions:
- In a medium bowl, add the spinach, strawberries, blueberries, peach, and red onion. Toss to combine.
- In a small bowl, whisk together mustard, honey and vinegar. Slowly add the olive oil while whisking. Add salt and pepper to taste.
- Right before serving, gently toss dressing with salad ingredients to coat evenly. Top with walnuts and feta!
