Ingredients:
- 1 cup canned pumpkin
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon pumpkin pie spice
- 1 cup + 1 tablespoon oat flour
- 1/2 cup dark chocolate chips
Directions:
- Preheat the oven to 350 degrees.
- Combine the pumpkin, honey, brown sugar, vanilla and egg in a bowl.
- In a separate bowl, stir together the salt, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice and oat flour.
- To make the oat flour, blend old-fashioned oats in a food processor until they reach the consistency of flour. Be sure to measure the oat flour after it has been blended.
- Add the dry ingredients to the wet mixture until just combined.
- Fold in the chocolate chips.
- Divide mixture into prepared muffin cups, about 2/3 of the way full.
- Bake for 18-22 minutes or until a toothpick when inserted into the center comes out clean.
