Pumpkin Chocolate Chip Muffins

Ingredients:

  • 1 cup canned pumpkin
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pumpkin pie spice
  • 1 cup + 1 tablespoon oat flour
  • 1/2 cup dark chocolate chips

Directions:

  • Preheat the oven to 350 degrees.
  • Combine the pumpkin, honey, brown sugar, vanilla and egg in a bowl.
  • In a separate bowl, stir together the salt, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice and oat flour.
  • To make the oat flour, blend old-fashioned oats in a food processor until they reach the consistency of flour. Be sure to measure the oat flour after it has been blended.
  • Add the dry ingredients to the wet mixture until just combined.
  • Fold in the chocolate chips.
  • Divide mixture into prepared muffin cups, about 2/3 of the way full.
  • Bake for 18-22 minutes or until a toothpick when inserted into the center comes out clean.
