Ingredients:
- 1/2 medium red onion, sliced 1/2-inch thick
- 1 small butternut squash, sliced 1/2-inch thick
- 1/2 red bell pepper, quartered and seeded
- 1/4 cup sliced kalamata olives
- 1 small zucchini, sliced 1/2-thick
- 8 ounces roasted red pepper hummus (or your favorite flavor)
- 2 cups fresh spinach
- 1/2 cup crumbled feta
- 4 whole wheat wraps or flat bread
- 2 Tablespoons olive oil
- Salt and Pepper to taste
- 1 tablespoon lemon zest (optional)
Directions:
• Preheat a large grill pan over medium heat. Brush onion, bell peppers, squash and
zucchini with 1 tablespoon olive oil, season with salt and pepper. Grill vegetables
about 3 minutes per side until tender and remove from heat.
• Spread 1/4 cup hummus on each wrap, divide vegetables evenly and place on the
wraps.Top each wrap with fresh spinach and feta cheese. Roll up and cut in half.
